Yellow Spaghetti Without Marsala

Full question

I want to try the Yellow Spaghetti recipe but it contains alcohol and I do not use alcohol in anything, in any way. What would be a good substitute for the marsala?

Our answer

Nigella's Yellow Spaghetti (from NIGELLISSIMA) coats strands of spaghetti with a rich and creamy sauce flavoured with saffron. The saffron is steeped in some marsala before using. This soaking process helps to extract maximum flavour from the saffron and is sometimes termed as "blooming".

Marsala is used as it has a nutty flavour that pairs well with the saffron. However if you can't use alcohol then we would suggest using 3 tablespoons of good chicken stock as an alternative as it will provide some extra flavour without being overpowering (vegetarians should use vegetable stock, though this is slightly lighter in flavour). Please bear in mind also that commercial chicken stocks contain salt, so you may want to taste the dish before adding any extra seasoning at the end of the recipe.
