I have baked this Easter egg nest cake every Easter since my husband bought 'Feast' for my birthday 8 years ago. When I moved from Ireland to Australia I forgot to bring this book with me, but when it came down to it, I realized I knew the recipe off by heart! This year my four children and I have baked this cake together, as we have in the years before. I have not made any changes to the recipe as I think it is already perfect however I was unable to get my hands on mini eggs this Easter so a mix between smarties eggs and crispy M&M mini eggs had to suffice. I'm sure it will taste just as yummy and perhaps add a different texture. Wheneve I'm making this cake Nigella's profound stress free instructions to place the broken bits back on 'in a loose fashion' always hums in my mind. For some reason this year, I do not have loose bits as I think my eggs were a little on the extra large side. Anyway, I hope you enjoy my picture of this years cake, I know I will enjoy eating it!
