This is my first cookalong attempt and my attention was instantly grabbed by the use of pumpkin, although I was apprehensive initially as I’ve never eaten never mind cooked with pumpkin before and saw this as a fun challenge and new taste experience. Considering the time of year I thought it would be easy to get a pumpkin but unfortunately I couldn’t, so I used ready-made pumpkin puree which was 100% pumpkin which I'm sure tastes just as good (plus a lot less effort) as the fresh stuff. I found the recipe very easy to follow and timings accurate. I substituted the digestive base with oat biscuits to add more texture. The hardest thing I found was leaving the cheesecake in the fridge over night to set properly... but it was worth it. It was so creamy and had a beautiful taste. Loved the hint of cinnamon from the base. To compliment the cheesecake I also made the butterscotch sauce as suggested in ‘Feast’ which made it even more heavenly. It’s safe for me to say it went down well and I'm now a lover of pumpkin!
