I couldn’t find clementines this time of the year at the supermarkets. So instead i used Mandarins which was relatively close. It worked just as well. This recipe was so easy and beautiful. I am amazed at my accomplishment! In terms of decorating, I thought the cake was beautiful on its own and that it would be a crime to alter the cake much. I decided to top it off with candied orange and lemon slices. Brought to cake to mum’s the next day to share. Thank you for this recipe. It was quite enjoyable.
