My Irish Oaten Rolls with my homemade apple fig chutney and a good Irish cheddar were a delicious lunch. My rolls were delicious but I was a bit confused by the different versions of the recipe. The online version in metric specified wholemeal flour while when I switched to cup measurements, whole wheat flour was specified. When I looked in my copy of Nigella's Kitchen cookbook, whole wheat flour was specified in cups, but the amount of flour was much less than the online version. I used wholemeal flour weighed out in grams, but my batter was much too loose, more like a thin mousse than a sandy texture as described in the recipe. I added more flour until I got a better texture that didn't spread all over the baking sheet. They seemed to bake just fine with a good texture and delicious flavor, but I would like to know why there was such a discrepancy in the type and amount of flour and which would be preferred.
