I chose to keep my version classic without my own twist. I hope I did it justice. The addition of the cornflour gave the cheesecake a lovely texture, and the maple syrup wasn't overpowering. I was recently given lemons from an elderly neighbour who I befriended during the Melbourne lockdowns, bonding over our Greyhound pets. I used one of these for my 1/2 tsp of lemon and smiled as I thought of my new friend. I was nervous about the water bath and just used double foil. Thankfully it worked.
