I loved baking these cookies! I followed the recipe pretty much as written, using almond flour instead of hazelnut since I don’t have a food processor. The instructions are extremely well written, so although it was a long process from making the dough to rolling, cutting, re-rolling, and sandwiching...it felt straightforward and fun! I used the raspberry/red currant filling for most of the cookies, and did a few using apricot jam. I think next time I will try to find/make a green jam or jelly to get the full range of jewel tones!
