Like most things this year, the cookies didn’t go exactly to plan. Being in rural New South Wales, I couldn’t get any mini cookie cutters, whole hazelnuts, redcurrant jelly or seedless raspberry jam. A round piping tip, regular raspberry jam and almond meal had to do. Nigella’s Linzer Cookies made a beautiful addition to my other festive bakes - crackle top gingerbread and five-spice walnut thumbprint cookies. Merry Christmas to all!
