These melt in the mouth biscuits are the epitome of Christmas joy! I love almond and sweet marzipan flavours during the festivities of Christmas (and winter in general), so I decided to opt for an almond variant of this recipe; toasting sliced almonds and grinding them down in my bullet blender before combining into the dough mixture. Ever the ‘Hygge seeker’ I’ve made my filling a tad more scandi-inspired, replacing red current jelly with lingonberry jam (truthfully because I bought some to have alongside some of Nigella’s black pudding meatballs baked in the oven!). I haven’t been able to get feedback on these yet... however, in my humble opinion (even as someone terrified of baking biscuits) these are superb! As with all of my festive baking, I’m freezing half for when the opportunity to share these with friends is back the cards, or maybe even a second Christmas in July! Thank you Nigella for the fantastic recipe :)
