Nigella's Guinness cake has long been a go to mine for birthdays and other celebrations. I have been making it since I received my fist Nigella cookbook -Feast. I have modified it a bit, using a slightly taller cake tin to add a bit more height to its pint appearance. I also have taken the liberty of using a local stout instead of the the standard Guinness stout - wanted to support our local microbrewery in today's environment. This added a slightly stronger stout flavor to the cake but still kept the moist texture and not too sweet flavor of the cake which makes it perfection.
