I made mini trifles as our wee flat is currently in self isolation in Wellington, New Zealand. We used limoncello as the liquor as we’d run out of vodka but it worked! I used the caramel for a few different decorations including one caramel dipped freeze dried raspberry. I scattered the rest of the raspberries on top and voilà! It was a wonderful recipe to follow and the flavours balanced beautifully, much more refreshing that your usual trifle. It was absolutely delicious and everyone loved them, thank you Nigella!!
