I was very pleased with this cake which I made with my homemade pumpkin puree. My kitchen smelled wonderful while it baked to a lovely height. The cake was moist with a light, tender crumb. Since Thanksgiving is so close, I thought it would be nice to serve it with my favorite mandarin orange cranberry relish made with fresh cranberries. It was perfect with the slightly tart relish contrasting with the sweet cake for the perfect bite.
