I bake this Nigella Guinness cake every year. I find it more therapeutic than any other to bake; it’s relatively simple, the bubbling caramelly mixture is mesmerising, and the smell from the oven is beyond incredible. It’s comforting to both bake and eat. I bake it for colleagues, and also for my family. My young daughter says it’s “absolutely delicious”, and my son silently demolishes it. My husband enjoys it with a pint (or two) of Guinness. Impossible not to return for seconds… and thirds…
