My dad was Irish, and he sadly passed away too soon, when I was just 12 years old.❤️ Celebrating my Irish heritage on St. Patrick’s Day is special, and this Guinness cake has been fixture on our celebration table for many, many years. I have an original copy of ‘Feast’ cookbook, (albeit somewhat tattered and splattered now) and always enjoyed baking Nigella’s delicious Guinness cake. I appreciate the recipe is simple and dependable, without needing a ton of equipment. I don’t bother making changes or glamming up the cake anymore - I’ve learned the original recipe and presentation is absolute perfection itself! The chocolate flavor is complex, the texture is moist and dense without being heavy, and the cream cheese frosting adds billowy clouds of creamy sweetness. Divine! Here in Los Angeles, I found these amazing Guinness bottles with the toucan on the bottles! Guinness has used the toucan in advertising campaigns since 1935, and I was thrilled to see special edition ‘Toucan’ bottles still in production today.
