I find that the addition of cornflour makes the sponges heavenly pillowy. I scented the batter with the jest of one lemon from the lemon-tree in my garden. I mixed more of my homemade strawberry jam with more fresh strawberries cut in smallish pieces. So I had to slit the bottom sponge in two to hide the extra strawberry filling.
