This is more of an “Elizabeth” Sponge than a Victoria. Though the timeless classic had not had its fundamentals ruined. When I have made sponges like this previously, they have not been as light and airy as this one. The cornflour very much aided this. To add some extra flavour to the sponge I have added orange zest to the mixture and also to the cream. Both the sponge and cream has been laced with vanilla to really help those flavours to punch through. This timeless classic is a pleasure to look at as well as to eat.
