'You can't beat a Victoria Sponge' - my Grandmother's response when asked what cake she would like for her special birthday. She taught me so much about baking, improvising and experimenting, so I wanted to honour her with a lovely cake for her 100th. This is my first effort at a semi-naked cake - hot day, drunk looking cake and the jam started oozing into the buttercream, so I made a feature and mixed some in to make pink sides to match the icing flowers (just what I intended all along!) Inside there are 3 layers - delicious and enough over for family who couldn't make the celebration.
