I have only made a Pavlova once before but I was excited to try this one. I was inspired recently to replace black pepper with Szechuan pepper in something sweet and this seemed the perfect recipe to give that a go. It was amazing! Mixing the Szechuan pepper with the rose water gave the meringue a depth of flavour not often found in meringue. I also added a bit of freeze dried strawberry powder to the whipped cream for more of a flavour boost. Loved it!
