Instead of pricking the sides, I used a roller wheel to give the biscuits their distinctive subtle marks. Then, I used my leftover Swiss meringue buttercream to sandwich each two pieces of biscuits, and it turned out delicious. Enjoyed them along with a cup of espresso on a rainy afternoon.
