LINGUINE WITH CLAMS Delicious yet a delicate flavour of the sea with these sweet clams. The simple sauce of wine and olive oil is amazingly creamy after emulsifying. I love the combination of garlic, chilli and parsley too. The only proviso I make is to add a little Parmesan (or a lot) even if an Italian will be horrified! And yes I do have Italian in my genes!
