Nigella's Victoria Sponge recipe is a family favourite. It's quick & easy enough to whip up on a weekday and looks & tastes equally impressive for a weekend gathering. We love the simplicity & being able to taste each element, but we do love the cream a little too much perhaps & so we double the amount & smother it on the outside as well as the middle! It's summer in Australia at the moment, so fresh berries in the middle & on top seems only fitting. Beautiful to look at & to eat!
