Date & walnut cake with a cream cheese filling/ topping with caramelised walnuts to finish. I made the cake in a loaf tin so I could slice it for decoration, I always add a couple of tablespoons of greek yogurt to the mix to give the sponge a bit of a bounce! The cream cheese filling/topping is made with cream cheese, butter and icing sugar making it the right balance of sweetness and taste! I caramelise in the walnuts in the oven, first coating them in melted butter and then toasting in top of moderate heated oven for 20 mins or till you can smell them, any longer & they start to catch. A favourite in our house.
