Liquorice pudding, so often misunderstood. This silky creaminess worked its quiet magic, transforming even the most resolute liquorice sceptics into devotees. There is something rather wonderful about watching suspicion melt into spoon-licking delight. I used coconut sugar in place of light brown muscovado sugar. It's gentle, caramel warmth lending a deeper, almost toffee-like hush to the liquorice’s boldness. With our household currently awash with coughs and sniffles, this little pot of glossy comfort felt less like dessert and more like a medicinal act of love. A sweet, soothing support just when we needed it most.
