I cooked Nigella’s Italian roast chicken with peppers, leeks and olives today. I did tweak the spices and seasoning a little. The original recipe calls for salt and pepper, however, I also added crushed garlic and some spices such as cumin paprika and chilli flakes. So the picture shows my final result but in the evening I tipped the remainder into a pan and burned off the excess water and it resulted in a wonderful dry and soft chicken. Many thanks!
