Welsh Cakes, on 1st March, St David's Day, of course. I thought I would try Nigella's version this time, the allspice being a radical departure from traditional mixed spice. Delicious result and the texture was perfect. The biggest challenge as always was getting the iron griddle, (or bakestone), up on to the hob. It weighs a ton. It was my mother's and certainly dates back, before her, to the 1800s. And I treasure it. It's a bit of an artform to get the heat up to just the right temperature to cook, but not to burn. But that is part of the glorious ritual, and there's always someone inclined towards a darker one. (I sent this picture to my son in Canada who was mildly disturbed to learn that I had abandoned the Bero Book this year.)
