When a friend asked me to make a naked cake for her daughter's birthday, Nigella's Vanilla layer cake with Ermine icing came to mind immediately. From past experience with the cake, I found the icing more stable than buttercream & the shortening kept the cake moist even days later. As the cake had to be made a day before the party, this was the perfect recipe. Everyone commented on how delicious, moist, indulgent yet light it was & it looked spectacular in the centre of the table!
