The rhubarb has been growing like crazy so I decided to make a Toasted Marshmallow and Rhubarb Cake. The recipe looked a bit daunting at first but was easy to follow and a satisfying way to spend a Saturday afternoon. The result, a stunning and delicious treat, with a delicate sponge showcasing the rhubarb.
