Georgina Hayden is a bit of a CookbookCorner favourite, and for good reason! Her books never fail to make me hungry, and her recipes are an ever-reliable source of comfort and joy. In MEDesque, Hayden journeys beyond her Greek-Cypriot roots, combining flavours and connecting countries, and I am more than happy to be taken on such a delicious voyage. It’s with a rumbling stomach that I give you a whistle-stop tour of some of the recipes that particularly sang to me, starting with the Halloumi, Coriander and Chilli Omelette Pita Wrap; then on to a Roasted Carrot, Cumin and Lentil Soup; Paprika, Cheese and Honey Scones; Leek, Bean and Chorizo Gratin; Spring Meatballs with Pasta and Peas; One-Pan ‘Nduja, Pepper and Three Cheeses Lasagne; Baked Cod, Fennel and Olives with Couscous; Prawn Saganaki Risotto; One-Pan Moussaka; One-Pan Mbakbaka (slow-cooked beef with caraway pasta); Charred Corn with Chorizo and Avocado; Shaved Fennel, Orange and Almond Salad; Chocolate Olive Oil and Hazelnut Loaf; Apple and Sesame Frangipane Galette; Yogurt, Orange and Olive Oil Cake; and — oh mama! — Salted Honey Brown Butter Madeleines!
