Joe Woodhouse’s books can always be relied upon to deliver inspiration, reassurance and flavour, and his new Weeknight Vegetarian is no exception. As the great Diana Henry says about it, “Every dish is a winner.” In time-honoured tradition, let me just mention some of the recipes that have caught my greedy eye: Curried Tahini, Lentil & Crunchy Veg Salad; Tomato-Fennel Pasta with Rocket Salad; Potato-Stuffed Flatbreads; Crispy Noodle Omelette; Coconut & Lime Leaf Broth with Rice Noodles; Garlic-Chilli Potato Dumplings; Roast Hispi with Toasted Seeds & Crumbled Chestnuts; Baked Cheddar Semolina with Puttanesca Sauce; Fried Potato Omelette with Blue Cheese; and the gorgeously green Asparagus & Spinach Pasta with Black Olive Breadcrumbs. Just typing this shortlist has made me ravenously hungry! I could have chosen any of those mentioned (and more besides) to share with you today, but I’m sure you’ll understand why, in the end, it just had to be his Monster Pea & Potato Croquettes!
