When, last Sunday, I tweeted a picture of my family dinner, I happily undertook to add the recipe for the Red Leicester Cauliflower Cheese that fierily dominated the photograph. It is the Red Leicester cheese that gives that gleaming sunset tone, and I use it for preference because it is my children's favourite. But I should also tell you, that this recipe is a very good way of using up a combination of cheeses you may have in your fridge.
