Ingredients

Serves: 6

Metric Cups
  • 100 grams butter
  • 100 grams caster sugar
  • 2 eggs
  • 100 grams self-raising flour
  • jam (any jam to suit)
  • icing sugar
  • butter icing
  • 4 ounces butter
  • 4 ounces superfine sugar
  • 2 eggs
  • 4 ounces self-rising flour
  • preserves (any jam to suit)
  • confectioners' sugar
  • butter icing

  • Method to be prepared twice, one per sandwich tin Prepare two sandwich tins
  • Cream butter and sugar together untill pale in colour, light in texture and fluffy Beat in eggs, one at a time while adding self raising flour at the same time
  • Transfer the mixture to the sandwich tins bake at 180o for 25- 30 mins until golden brown leave to cool
  • Sandwich together with jam and butter icing dust cake with icing sugar

    • Lovely cake tastes better the next day once it's been in the fridge the flavours seem to come out. Made this cake twice now both times great. Although at first I didn't realise you had to double the ingredients shown as its written for one cake.
