I invented this recipe to use up some boiled potato: the name came to me when I realised that all the quantities (for one person) were... "one" !! This makes it really easy to increase for larger numbers. Delicious as part of a breakfast or a quick and easy light meal.
- 1 large potato (boiled)
- 1 egg
- Cheddar cheese (or similar, a piece about the size of a matchbox)
- 1 tablespoon flour
- seasoning (to taste)

The amount of flour is approximate and will depend on the size of your potato and your egg. You are aiming for a stiffish mixture that needs pressing down in the pan, but not a dough. Serve with bacon/mushrooms/tomatoes/sausages....
