Number One Cheesy Potato Cakes

Introduction

I invented this recipe to use up some boiled potato: the name came to me when I realised that all the quantities (for one person) were... "one" !! This makes it really easy to increase for larger numbers. Delicious as part of a breakfast or a quick and easy light meal.

Ingredients

Serves: 1

  • 1 large potato (boiled)
  • 1 egg
  • cheddar cheese (or similar, a piece about the size of a matchbox)
  • 1 tablespoon flour
  • seasoning (to taste)

Method

  • Mash the potato with a fork: don't pulverise it completely, as you want some texture in the finished dish. Beat in the egg.
  • Grate the cheese and stir in. Mix in the flour and season to taste: just salt and pepper if you are using them as an accompaniment to other tasty foods, but you can add herbs and other spices to taste if the potato cakes are the main feature of the meal.
  • Heat a little sunflower oil in a frying pan, drop in spoonfuls of mixture and press down with the back of a fork. The potato cakes should be fairly thin. Fry over medium heat till the underside is brown, then flip over, reduce heat a little and continue to fry till brown on the other side and cooked through.
  • Additional Information

    The amount of flour is approximate and will depend on the size of your potato and your egg. You are aiming for a stiffish mixture that needs pressing down in the pan, but not a dough. Serve with bacon/mushrooms/tomatoes/sausages....
