Cold Christmas Pudding

Introduction

This is a delicious Christmas Pudding for countries that have Christmas in Summer!

Ingredients

Serves: 4-6

  • 1 evaporated milk
  • 31 millilitres water
  • 1 packet vanilla instant pudding
  • 1 tablespoon gelatine
  • 83 millilitres boiling water
  • 2 tablespoons golden raisins
  • 2 tablespoons raisins
  • 2 tablespoons currants
  • ⅛ kilogram cherries
  • 250 millilitres brandy

Method

  • Boil fruit for a few minutes, pour off water and pour over brandy, leave for a few hours or overnight.
  • Put evaporated milk and water into bowl and add the instant pudding. Beat until thick.
  • Fold in fruit and add dissolved gelatine (in 1/3 cup boiling water). Mix well
  • Pour into mould and put in fridge to set. Serve with cream
