Courgette Loaf Cake

Introduction
Cougette cake-adjust as necessary _ I made a drizzle to go over the top (keeps it very light) but easily thicken it up as icing with more cream cheese and a little butter.

Ingredients
Serves: 8 - 10
- 2 zucchini
- ½ inch butter
- 1 cup flour
- 1 teaspoon baking powder
- ¾ cup sugar
- 2 medium eggs
- 1 drop vanilla essence
- 1 pinch of cinnamon
- 2 drops lemon juice
- 3 tablespoons plain yogurt (cream cheese lemon juice & icing sugar)

Additional Information
Top with a glaze of light cream cheese, lemon juice and icing sugar - mix to preferred consistency. I like it to be a drizzle that melts into the cake but you can also do a thick icing to sit on top of it.

I have just made this cake and I am very disappointed with the method instructions. I assumed that you grate the courgette before adding to the egg and butter, (the method just said add the courgettes ) when adding all the ingredients it missed out when to add the sugar, so according to the recipe you need 3/4 cup of sugar but according to the method you don't add it to the mixture. Please re write the method making it much clearer. Thank you
