Courgette Loaf Cake

Introduction

Cougette cake-adjust as necessary _ I made a drizzle to go over the top (keeps it very light) but easily thicken it up as icing with more cream cheese and a little butter.

Ingredients

Serves: 8 - 10

  • 2 zucchini
  • 1⅓ butter
  • 250 flour
  • 1 teaspoon baking powder
  • 188 sugar
  • 2 medium eggs
  • 1 drop vanilla essence
  • 1 pinch of cinnamon
  • 2 drops lemon juice
  • 3 tablespoons plain yogurt (cream cheese lemon juice & icing sugar)

Method

  • Melt butter and add eggs to mix.
  • Add vanilla and zucchini. Add lemon juice, flour and baking flour and cinnamon. mix and add yoghurt.
  • Bake at 180 C for 45 mins or until cooked.
  • Additional Information

    Top with a glaze of light cream cheese, lemon juice and icing sugar - mix to preferred consistency. I like it to be a drizzle that melts into the cake but you can also do a thick icing to sit on top of it.

    • I have just made this cake and I am very disappointed with the method instructions. I assumed that you grate the courgette before adding to the egg and butter, (the method just said add the courgettes ) when adding all the ingredients it missed out when to add the sugar, so according to the recipe you need 3/4 cup of sugar but according to the method you don't add it to the mixture. Please re write the method making it much clearer. Thank you
