Easy Chicken Balls

This is a favourite with my friends because it is delicious and light, and my favourite because it is so easy to make.

Ingredients

Serves: about 6

Metric Cups
  • 250 grams chicken (minced)
  • 1 large onion (chopped very finely)
  • 6 cloves garlic (chopped finely)
  • 1 bunch fresh coriander (chopped finely)
  • 1 teaspoon lime juice
  • 1 medium egg
  • 1 pinch of salt (to taste)
  • ½ teaspoon sugar
  • 1⅓ centimetres cinnamon sticks (powdered)
  • 8⅚ ounces chicken (minced)
  • 1 large onion (chopped very finely)
  • 6 cloves garlic (chopped finely)
  • 1 bunch cilantro (chopped finely)
  • 1 teaspoon lime juice
  • 1 medium egg
  • 1 pinch of salt (to taste)
  • ½ teaspoon sugar
  • ½ inch cinnamon sticks (powdered)

Method

  • Just mix everything together in a big bowl, including the egg
  • Beat with a fork, or as I do, with your hands, to make the mixture light and as airy as possible, considering it's chicken. This should take around five mins
  • Lightly grease a microwaveable plate with butter, and put small amounts of the mixture, shaped roughly into balls, on the plate. I make mine about the size of red grapes
  • Microwave for 5 mins, with the setting at medium high. You will have to adjust the microwave setting and time according to the make of the microwave
  • Take out and serve
