Fudge Iced Sticky Cake

Introduction

A super moist sponge cake topped with white fudge icing

Ingredients

Serves: 6-8

For the Cake

  • 8 ounces all-purpose flour
  • 4 ounces butter
  • 3 ounces sugar
  • 1 egg
  • ½ pint milk
  • 6 ounces golden syrup or light corn syrup
  • ¼ ounce baking soda

For the Icing

  • 227 confectioners' sugar
  • 57 buttermilk (as required)

Method

  • To make cake: sieve flour, and melt butter, syrup, sugar & milk in a pan, stirring all the time. Do not allow to boil.
  • Remove from heat, stir bicarb of soda quickly into syrup mixture.
  • Gradually add the melted mixture and beaten egg to dry ingredients. mix well.
  • Pour mixture into well greased tin. Bake for approx. 45-60 mins in slow oven.
  • White fudge icing: melt butter with some milk, do not boil. Beat into confectioners' sugar, Cool and beat again before using.
  • Spread icing on cake & decorate with back of fork. Enjoy!
