Cut stalks into 5cm lengths Place into baking dish cover with brown sugar and lime juice. Bake on 200C (fan forced) for 20-30 min Whip cream until stiff. Add Vanilla and Mascarpone cheese and whip until firm. Scoop Rhubarb into favourite desert bowls and place a couple of generous table spoons of whipped cream & cheese on top. Place on a serving plate with 2 Sponge Finger biscuits each. Enjoy.
