Ingredients

Serves: 20

Metric Cups
  • 250 grams unsalted butter
  • 200 grams dark chocolate (broken up)
  • 75 grams glace cherries (or sour)
  • 50 grams chopped nuts (optional)
  • 80 grams cocoa (sifted)
  • 65 grams plain flour (sifted)
  • 1 teaspoon baking powder
  • 360 grams caster sugar
  • 4 large eggs
  • 1 orange zest
  • 250 millilitres creme fraiche (or double cream)
  • 9 ounces unsalted butter
  • 7 ounces bittersweet chocolate (broken up)
  • 3 ounces candied cherries (or sour)
  • 2 ounces chopped nuts (optional)
  • 3 ounces unsweetened cocoa (sifted)
  • 2 ounces all-purpose flour (sifted)
  • 1 teaspoon baking powder
  • 13 ounces superfine sugar
  • 4 large eggs
  • 1 orange zest
  • 8⅘ fluid ounces creme fraiche (or double cream)

Method

  • Preheat oven to 180C/350F/Gas4. Line a 25cm square baking tin with greaseproof paper or just lightly butter it.
  • In a large bowl over simmering water, melt the chocolate and butter and mix until it is nice and smooth. Add the cherries and nuts, if you're using and stir all together.
  • In a separate bowl, mix together cocoa powder, flour, baking powder, sugar then add all this to the chocolate, cherry, nut mixture, mix all until you have silky consistency.
  • Poor the mixture into the baking tray and put in oven for 20-25 minutes. You DON'T want to overcook them, unlike cakes you don't want a skewer to come out clean. The brownies should be slightly springy on the outside but still nice and gooey in the middle.
  • Allow the brownies to cool in the tray, then CAREFULLY transfer them to a large chopping board and cut them into chunky squares.
