Ingredients

Metric Cups
  • 3 eggs (separated)
  • 500 grams mascarpone cheese
  • 150 grams caster sugar
  • 1 pinch of salt
  • 200 grams savoiardi biscuits (sponge fingers)
  • 500 millilitres coffee (American)
  • 200 grams chocolate chips
  • 1 tablespoon cocoa powder
  • 3 eggs (separated)
  • 17⅔ ounces mascarpone cheese
  • 5⅓ ounces superfine sugar
  • 1 pinch of salt
  • 7 ounces savoiardi cookies (sponge fingers)
  • 18 fluid ounces coffee (American)
  • 7 ounces chocolate chips
  • 1 tablespoon unsweetened cocoa

Method

  • Mix two egg yolks with the sugar till you have a very clear cream.
  • Beat three egg whites with a pinch of salt until stiff.
  • Gently fold the mascarpone cheese in the sugar/yolks cream and then add carefully the egg whites.
  • Spread some of the obtained cream on a tray and start making layers: dip the biscuits into the coffee and put them on the tray placing them next one another, spread some crème on them and then a handful of chocolate chips.
  • Go on this way until the biscuits are over.
  • Cover the last layer with the cream and dust with the cocoa powder. Keep it in the fridge take it out about 20 mins before serving.
