Fresh Lemon Jelly

Introduction

We always have an abundance of lemons, this is an easy way to get a lovely refreshing sweet from them. Makes about 6 cups.

Ingredients

Serves: 8

  • 3½ cups water
  • 1 cup sugar
  • 1 cup lemon juice
  • 1 ounce gelatine
  • 1 lemon zest
  • ¾ cup lemon juice (extra)

Method

  • Bring water, sugar and zest to boil, boil for a few minutes. Meanwhile whisk together gelatine and cup of lemon juice in a large jug.
  • When syrup has boiled whisk it in to the gelatine mix. Stir well. Then add the extra lemon juice, stir well once more to combine.
  • Strain mixture into individual serving bowls (or one large one) and refrigerate until set.
