The sauce is interesting and really delicious in this. I don't like coffee, but I like this sauce in spite of it:) There's always a long list of ingredients in meatloaf, but it's super easy to just scrunch it all together.

Ingredients

Serves: 4-6

Metric Cups

For the Meatloaf

  • 3 slices white bread (crusts removed and cut into squares)
  • 125 millilitres milk
  • 500 grams minced beef
  • 500 grams minced pork (or sausage)
  • 2 onions (finely chopped)
  • 2 teaspoons curry powder
  • 63 millilitres chopped fresh parsley
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 carrot (grated)
  • 1 turnip (grated)

For the Sauce

  • 125 millilitres water
  • 125 millilitres tomato sauce
  • 63 millilitres Worcestershire sauce
  • 2 tablespoons vinegar
  • 1 teaspoon instant coffee
  • 30 grams butter
  • 2 tablespoons lemon juice
  • 63 millilitres brown sugar

For the Meatloaf

  • 17⅔ ounces ground beef
  • 17⅔ ounces ground pork (or sausage)
  • 2 onions (finely chopped)
  • 2 teaspoons curry powder
  • 2 fluid ounces chopped fresh parsley
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dijon mustard
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 carrot (grated)
  • 1 turnip (grated)

For the Sauce

  • 4 fluid ounces water
  • 4 fluid ounces tomato sauce
  • 2 fluid ounces Worcestershire sauce
  • 2 tablespoons vinegar
  • 1 teaspoon instant coffee
  • 1 ounces butter
  • 2 tablespoons lemon juice
  • 2 fluid ounces brown sugar

Method

Meatloaf is a community recipe submitted by Coby and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Preheat oven to 180°C or 160°C for fan-forced.
  • Pour milk over the bread and let stand until milk is absorbed.
  • Place all the meatloaf ingredients in a bowl. Add the bread and mix until very well combined.
  • Press mixture into a greased 4 litre capacity loaf tin. Bake for 30 minutes.
  • Combine the sauce ingredients in a small saucepan. Gently bring to the boil. Reduce heat and simmer for 5 minutes.
  • Drain fat from the meatloaf and invert onto a baking dish. Pour over the sauce and cook for a further 30 minutes basting every 10 minutes.
