Ingredients

Serves: Makes 500 ml or 2 cups

Metric Cups
  • 3 mandarin oranges
  • 1 lemon
  • 250 millilitres water
  • 425 millilitres sugar
  • 3 mandarin oranges
  • 1 lemon
  • 8⅘ fluid ounce water
  • 14⅞ fluid ounce sugar

Method

Mandarin Marmalade is a community recipe submitted by cupcake mommy and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Remove the peel from the oranges and slice thinly. Place in a small, stainless steel sauce pan. Remove zest from the lemon and cut into fine strips and add to the pan along with the water.
  • Bring to a boil over high heat, reduce heat, cover and boil gently for 20 minutes. Remove and discard white rind and seeds from lemon.
  • Chop orange and lemon pulp finely. Add to saucepan, return to a boil and boil gently for 20 minutes.
  • Add sugar, return to boil and boil rapidly, uncovered, until the mixture will form a gel, about 10 minutes, stirring frequently.
  • Remove from heat. Ladle into jars and process . . .
  • To make cranberry orange marmalade add 1/4 c chopped dried cranberries a few minutes before reaching the gel stage.
