Easy Asian Noodle Salad

Introduction

Quick and easy, low fat, rice noodle salad - you can live on this salad but you can't gain weight!

Ingredients

Serves: 0

  • 1 packet pho bhan (dried rice noodles)
  • 2 carrots
  • 1 cucumber
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 red onion
  • 1 bunch cilantro
  • ½ cup peanuts (or roasted cashews)
  • ½ cup sweet chile sauce
  • ½ cup rice wine vinegar (or white vinegar)
  • ¼ cup thai fish sauce (nam pla)
  • ¼ cup warm water

  • This salad can be a main meal for four or added to an Asian banquet
  • You can prepare in advance and add the dressing at the last moment to keep the colour and crunch
  • Serve at room temperature
  • Mix all liquid ingredients in a small non metallic bowl and put the dressing aside
  • Boil rice noodles as per instruction, drain and rinse with cold water (Spray with a little oil and mix to stop them from sticking)
  • Peel carrots and shred all the vegetables (I use a mandolin but a grater would work well)
  • Mix veggies, noodles and dressing in a large bowl, top with chopped coriander and peanuts
