Pakora - Pakoda - Pakoras

Introduction

Forgive the title, but spelling hindi words in the Roman alphabet leaves a lot of room for variation and I wanted to make it easy to search for. Very easy, made in a jiffy (whatever one of those is)

Ingredients

Serves: 4-6

For the Batter

  • 2 cups gram flour (ground chick peas)
  • 1 tablespoon fenugreek leaves (or coriander)
  • 1 teaspoon salt
  • ½ teaspoon chili powder (easier to distribute evenly than chopped chillies)
  • 1 teaspoon garam masala (a good teaspoon)
  • 1 tablespoon oil
  • water (to form a thick, clinging batter)

For the Vegetables

  • slices onions
  • slices potatoes (raw, leave skins on if you like)
  • cauliflowers (florets)
  • broccoli (florets)
  • slices paneer
  • slices eggplants
  • snow peas
  • baby sweetcorn
  • any vegetables (whatever you fancy really but nothing too watery like tomato I should imagine)

Method

  • Simply mix the batter in a large bowl, throw in the vegetables and stir to give all the pieces of vegetable a good coating.
  • Deep fry in batches until golden brown.
  • Drain on kitchen paper and serve with ketchup/chutney.... A very nice picnic food by the way.
