Ingredients

Serves: 2

Metric Cups
  • 150 grams chorizo (chopped)
  • 1 can white beans (rinsed and drained)
  • 1 can chopped tomatoes
  • 5 ounces chorizo (chopped)
  • 1 can white beans (rinsed and drained)
  • 1 can diced tomatoes

Method

  • Heat a tablespoon or so of olive oil in a heavy-bottomed saucepan over medium heat. Add the chorizo and cook for a few minutes.
  • Add the beans and stir gently to combine. Allow to cook together for a few minutes, to allow the beans to absorb some of the chorizo flavour, then add the tomatoes.
  • Allow to come to just below boiling then reduce to a simmer for 20 minutes or so. Then dig in!

    This tasted lovely after only 20 minutes simmering, so it could probably handle even longer if you have the time. No additional seasoning needed as the chorizo flavour infiltrates everything beautifully, particularly the beans!
