These fluffy pancakes are great with maple syrup and a side of crispy American bacon. Perfect for a lazy Sunday morning!


Serves: 6

  • 2 medium eggs
  • 1 tablespoon lemon zest
  • 375 millilitres buttermilk
  • 6 tablespoons brown sugar
  • 4 tablespoons melted unsalted butter
  • 375 millilitres flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

  • Beat eggs, lemon zest, buttermilk, and brown sugar. Slowly whisk in melted butter.
  • In a separate bowl mix flour, baking powder, baking soda, and salt.
  • Add egg mixture to flour and mix well. If it's too thick add a bit of regular milk until it reaches the consistency you like. I find that the thicker I make the batter, the fluffier the pancakes.
