Ingredients

For the Rum Ckae

  • ¼ cup golden rum
  • ½ cup buttermilk
  • 2 medium eggs
  • ½ teaspoon vanilla extract
  • 8 tablespoons softened unsalted butter
  • ¾ cup golden syrup or light corn syrup
  • ½ cup raw sugar
  • 1½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt

For the Frosting

  • 4 tablespoons unsalted butter
  • ¼ cup golden syrup or light corn syrup
  • 2 tablespoons golden rum

  • Preheat oven to 350F.
  • Cream the butter & golden syrup or light corn syrup & sugar.
  • Combine the liquids & the dry ingredients in separate bowls, then add alternately to the butter mixture. Add eggs last and then beat until blended.
  • Pour into a loaf pan that has been slathered well with butter & floured. Bake for 40-50 minutes until...golden! Let cool slightly and make glaze
  • Melt butter in a saucepan & add syrup & rum. Bring to a boil for 4-5 minutes until mixture thickens. Take off heat, set aside to let cool slightly
  • Prick with a wooden skewer to make holes all over the cake, and pour the glaze over it.
