  • 1 clove garlic
  • 2 spring onions
  • 250 grams raw prawns
  • 50 grams flour
  • sherry
  • vegetable oil (for frying)
  • limes (cut into quarters, for garnish)

  • 1¾ ounces flour

Method

  • Into a food processor put the garlic and roughly chopped spring onions, blitz.
  • Add prawns and flour with a sherry splosh, and blitz again.
  • Leave to rest in fridge for at least 10 minutes before deep fat frying.
