Baked Potato Burger

Introduction

This stuffed baked potato was very popular at the now defunct Pam Pam's West in San Francisco, CA back in the early 1970's. All the wait persons wore a badge with their names and the state or country they were from. This restaurant did most of it's big business when the bars and disco's closed and many famished, exhausted and innebriated people came in to eat. The Baked Potato Burger was a great antidote to all that drinking and divine decadence. Enjoy!

Ingredients

Serves: -

  • 4 large baked potatoes
  • 1 cup sour cream
  • 1 pound ground beef (or ground turkey)
  • salt (to taste)
  • pepper (to taste)
  • 1 small chopped finely onion
  • 1 cup shredded Cheddar cheese

Method

  • Bake the potatoes When cool enough to handle make a "boat" out of each potato and scoop out the flesh...place flesh in bowl and coarsely mash them. In a skillet brown the ground (minced) beef or turkey with the chopped onion, add salt and pepper, drain off any fat and add this to the potato mixture along with the sour cream, 1/2 cup of shredded cheese and mix till all the ingredients are blended. Scoop this mixture back into the potato "boats" and top with the shredded cheese that's left. Put the potato "burgers" back into a 350 degree oven for about 10 minutes till heated through and cheese melts on top of them. This is wonderful with a simple mixed green salad with tomatoes. Kids love them!
