Another Harv special. Sorry if you have seen this already on one of my postings!! Cheating again!! And a very simple recipe It is our Poorly person food in our family. Always come out when one of us is "a little under the weather" so I cheat by buying many items already prepared.

Ingredients

Serves: 4

Metric Cups
  • 1 packet pancetta cubes
  • 3 cloves garlic (peeled)
  • 1 medium onion (peeled and finely chopped)
  • 20 button mushrooms (wiped and halved)
  • grated Parmesan
  • pasta quills
  • 1 tub double cream
  • 1 pinch of ground black pepper

  • 1 pinch of ground black pepper

Method

Harv's Carbonara is a community recipe submitted by Harvey Nicoll and has not been tested by Nigella.com so we are not able to answer questions regarding this recipe.

  • Put Garlic and onion in food processor and chop together.
  • Put a little oil in frying pan. heat add Onion and garlic and Pancetta. Brown.
  • Add mushrooms cook for another two to three minutes. Then add some black pepper.
  • Put hot water on for pasta and add a little oil bring to boil. Cook as per instructions.
  • Add cream and half the parmesan to the mushrooms and bacon etc. simmer for a couple of mins to thicken while the pasta cooks.
  • Drain pasta and add to sauce, keep on low heat and stir well to incorporate. while you get the bowls and cutlery ready. Serve.
  • Add some more parmesan on top with a little more black pepper. Enjoy!
